Is whipped feta chicken healthy?

This is a surprisingly healthy recipe! From the lean protein base to the colorful veggies on top, this is a very well balanced dish. We find that seasoning is key to packing flavor into vegetables, and we really focus on enhancing flavor everywhere we can! So while this whipped feta baked chicken is delicious and comforting, it is nutritious as well.

Compared to other cheeses, feta is relatively low in fat making it a healthy choice if you are going to cook with dairy. It is made from sheep and/or goat milk, which makes it healthier than cheese made from cows milk. Feta has significantly more protein, calcium and vitamin B than most cheeses! Not to mention, the brining process leaves feta with probiotics that help to support gut health.

And we use a lean, skinless cut of chicken which is a great way to incorporate animal protein! It’s important to balance out the proteins that are high in saturated fat with those that are on the leaner side. All in all, this recipe is perfect for days when you want something low in carbs that’s still filling and scrumptious. And it is a great way to sneak more nutrition into your kids’ meals!

What does feta cheese taste like?

Feta is a Greek cheese, made from sheep’s milk, and it is both crumbly and creamy. It is tangy, rich in flavor, and salty. Feta gets its characteristic flavor from the process of brining cheese curd and pressing it  into blocks. 

Because it’s higher in water content, feta cheese has a slightly lower in fat content than other cheeses. And because its flavor is so intense, you can get by with less cheese in each recipe. Good for the bank account and the body! 

Can I eat whipped feta if I am lactose intolerant?

A fun fact about feta cheese is that it is not made from cow’s milk, so many people with traditional lactose intolerance can eat feta without issues. Goat’s milk and sheep’s milk are easier for the body to process so feta is a cheese that can be ok for those allergic to cow’s milk! But, if you have a severe allergy, make sure you talk to your doctor before testing the waters!

How to make whipped feta chicken

  1. Place chicken in a 12 x 8 oven-proof dish in a single layer.
  2. Sprinkle half of the salt, pepper, oregano and thyme onto the chicken breasts. Flip the chicken and season the other side.
  3. In a blender, add feta cheese, yogurt, lemon juice, garlic and 2 tbsp olive oil. Pulse until smooth.
  4. Pour whipped feta mixture onto the chicken.
  5. Cover with tomatoes, green olives, kalamata, shallots, remaining olive oil, salt, and pepper.
  6. Bake uncovered at 375 degrees Fahrenheit for 35-40 minutes or until chicken is cooked through. *Note if the chicken is thick, it will need to be cooked longer, we recommend pounding it thinner.
  7. Garnish with fresh Italian parsley and/or cilantro!
  8. Enjoy!

Whipped Feta Baked Chicken

This chicken is coated in a feta mixture and topped with a mix of tomatoes, olives and herbs! It’s so moist and full of flavor!

Ingredients  

  • 1 1/2 lbs chicken breasts
  • 1 tsp salt more or less to taste
  • ½ tsp black pepper more or less taste
  • 1 tbsp oregano

  • 1/2 cup full fat yogurt or sour cream
  • juice of 1 lemon

  • 1/4 cup olive oil divided
  • 8 oz baby cherry tomatoes
  • 1/2 cup chopped and pitted manzanilla green olives
  • 1/2 cup chopped and pitted kalamata olives
  • 1 small chopped shallot

    Delicious. I didn’t have tomatoes so I started adding different things. Pitted green & kalamato olives, plus rough chopped chickpeas, banana peppers & a few mushrooms. Will definitely make this again.

    This was so delicious! I used chicken thighs and added sliced yellow peppers, red peppers and mushrooms because I needed to use them up. My family loved it! So flavorful!

    1. We’ve never given it a try in a slow cooker, if you want to try it, place in the slow cooker and set on high for 3-4 hours or low for 5-6 hours. Be sure to let us know how it turns out!

      1. Oven version was soooo much better! The feta topping just disappears into liquid in the crock pot and the tomatoes and olives don’t roast.
