  1. Combine. Place the Boursin cheese in the center of a large baking dish. Add the orzo, garlic, sun-dried tomatoes, and olives. Drizzle the oil on top.  
  2. Season the Stock. In a separate bowl, combine the vegetable stock and seasonings. Pour the liquid into the baking dish, covering the ingredients. 
  3. Bake. Cover with aluminum foil, and bake until the orzo is tender, stirring halfway through. 
  4. Add the Remaining Ingredients. Stir in the spinach, parmesan, and heavy cream.
  5. Bake Again. Return the dish to the oven, uncovered, and continue to bake until the spinach wilts and the sauce is well combined and creamy.

Ingredients  

  • 1 Boursin cheese block
  • 1 pound uncooked orzo
  • 4 garlic cloves chopped fine
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup Kalamata olives chopped
  • 2 Tablespoons olive oil
  • 4 cups vegetable stock
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups spinach
  • 1/2 cup Parmesan cheese
  • 1/2 cup heavy cream

Instructions 

  • Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
  • In a large baking dish, place the Boursin cheese in the center.

  • Add the uncooked orzo, chopped garlic, sun-dried tomatoes, and Kalamata olives to the baking dish with the Boursin cheese. Drizzle the oil on top.

  • In a separate bowl, combine the vegetable stock, red pepper flakes, dried thyme, dried oregano, salt, and pepper.
    4 cups vegetable stock, 1/2 teaspoon red pepper flakes, 1/2 teaspoon dried thyme, 1/2 teaspoon dried oregano, 1/4 teaspoon salt, 1/4 teaspoon black pepper
  • Pour the seasoned vegetable stock mixture over the orzo, sun-dried tomatoes, and olives in the baking dish.
  • Cover the baking dish with aluminum foil.
  • Bake in the preheated oven for 30 minutes, stirring the pasta gently after 15 minutes.
  • After 30 minutes, remove the foil and stir in the spinach, Parmesan cheese, and heavy cream.

    Delicious, the entire family liked it! I doubled the Boursin and cream to make it saucier. I also swapped orzo with macaroni to please the kiddos. I boiled the macaroni until half cooked and then added to the Boursin and everything else as written. I only used 2 cups broth (not 4) for the bake since the pasta was half cooked already.

    OMG!!! This was absolutely delicious! I didn’t have veg broth so used chicken and added diced rotisserie chicken after the first 30 minutes. I had to make myself stop eating it!! What would I change? More sun dried tomatoes( I guessed) and use it as a side for a cooked chicken breast or even fish. This will be added to our regulars for sure.

    I’m not a fan of orzo so substituted ditalini and it worked perfectly. I had my doubts when I pulled it out to stir at 15 minutes (thought it was going to be watery), but trust the process, it turned out great.

    Loved this!! I did end up adding shrimp to it when I added the spinach and cream, cooked it to the full ten minutes and so yummy.

    Delicious! I do have to say though- I tripled the recipe and there was too much liquid. I wound up removing a cup of extra liquid at the end. I also reduced the salt and added well seasoned chicken thighs.
    I will absolutely make this again!!

    Ladies was outstanding! I followed your recipe as written and at the point you stir in the spinach I also added shrimp, chicken andouille sausage and some smoked chicken. I also felt it needed a little acid so I squeezed some lemon once plated. My husband says it’s a keeper!
