Greek Salad

We love a simple salad recipe that is wholesome and nutritious. This Greek salad checks off all the important boxes. With common ingredients, you may be able to throw this together with what you already have in your fridge!

What kind of lettuce to use for greek salad

Typically we use shredded romaine lettuce, but you can diversify this salad by switching up the greens! For a similar texture to the romaine lettuce, you can use shredded iceberg lettuce or even bib lettuce. We love the extra crunch from these greens.

You can really shake things up and try more flavorful leafy greens like rainbow chard or swiss chard. Spinach and arugula also work well for this salad, and you can even use a mesclun blend!

The flavor of kale would compliment the salad ingredients super well. Just make sure to massage the kale with some lemon juice before mixing! Kale tends to have a tough, fibrous texture. Citrus helps to loosen that up and makes the kale much easier to chew!

Other ways to add variety to our Greek Salad recipe

In addition to changing up the leafy greens, there are tons of ways to personalize our Greek salad.

To make this salad recipe a bit more filling, you can add in some protein. Sliced steak or chicken would be a great topping for this salad. You can even take it to the sea and top it with salmon or shrimp! For plant-based protein, you could add lentils, beans, chickpeas or quinoa.

And if you aren’t a fan of any of the toppings in this salad, you can always remove them. We know that olives are overpowering and can be a bit divisive. You can even make this recipe dairy free by removing the feta if you have a lactose intolerance. This Greek salad will still be delish even if you exclude an ingredient or two!

How to make Greek salad

  1. Start by preparing all of your salad ingredients! Thinly slice the lettuce. Then dice the tomatoes and cucumbers into small cubes. Cut the kalamata olives in half and slice the red onion.
  2. Next, make the salad dressing. Combine olive oil, oregano, basil, garlic powder, vinegar, lime juice, salt and pepper in a mason jar. Cover and shake well.
  3. Get a large bowl. Put the lettuce in the bowl.
  4. Add the tomatoes, cucumbers, kalamata olives, onions, feta and pita chips on top of the lettuce.
  5. Drizzle with as little or as much dressing on top of the salad.
  6. Toss the salad with large salad spoons or tongs.
  7. Serve immediately!

Can I make this salad in advance?

Unfortunately, salad recipes don’t keep well after you mix the ingredients together. The moisture from the ingredients and dressing over hydrate the greens. Because of this, you end up with a bit of a mushy mess!

If you want to prepare this salad ahead of time, we have a way you can make it work. Prepare all of your ingredients and the dressing, but store them separately.

You can store the fresh toppings together, but we recommend keeping the pita chips, lettuce and dressing in separate containers. When you’re ready to eat, throw it all together and you’ve got a delicious meal in front of you!

What to serve with Greek salad

Greek salad is an awesome standalone meal, but it also makes for a great side dish. It is so refreshing and vibrant! We love to serve it alongside these main dishes:

Ingredients

  • Salad
  • 3 cups shredded romaine lettuce or leafy greens

  • 1 large english cucumbers approx 1 1/2 cups

  • 1/2 tsp salt to taste
  • 1/2 tsp black pepper to taste
