For this recipe, we use just a handful of ingredients including salmon, avocado, and seasonings. However, you can easily mix and match different items to make these rolls your own! 

Ingredients You Need

  • Cucumber – Use large, English cucumbers. They have thinner skin and fewer seeds than other varieties, making them easier to peel. 
  • Smoked Salmon – Use cold or hot smoked salmon, and opt for any variety you like best! 
  • Avocado – Use a ripe avocado, and smash it into a smooth paste. 
  • Salt and Pepper – Adjust to taste. 
  • Black Sesame Seeds – Technically optional, these add a slight nutty flavor and crunch. 

How to Make Quick Salmon Cucumber Rolls

  1. Prepare the cucumber. Rinse the cucumber, and cut off both ends. Then, use a vegetable peeler to slice long strips. 

Note: When you hit the seedy part and are not able to peel an even strip, turn the cucumber over, and slice from the other side. You will get about five to six strips of cucumber per side! 

  1. Arrange. Arrange the cucumber slices next to each other, overlapping them slightly. Then, use a dry paper towel to pat the cucumber dry and remove any excess moisture.
  2. Layer. Next, spoon the mashed avocado over the cucumber, near one end. Then, add the salmon on top.  
  3. Roll. Starting with one end of the cucumber, roll the vegetable onto itself. Secure the roll with a toothpick. 
  4. Slice. Use a sharp knife to slice the cucumber roll into bite-sized pieces.
  5. Season. Sprinkle the rolls with salt and pepper to taste. Then, add a sprinkle of black sesame seeds, and enjoy!

  • 1 large English cucumber
  • 3 ounces smoked salmon
  • 1 avocado mashed
  • Salt to taste

Instructions 

  • Thoroughly rinse the cucumber, and slice off both ends.
