Air Fryer Garlic Parmesan Potato Wedges

These air fryer potato wedges are all about the seasonings! They are full of flavor, tender on the inside and crispy on the outside.

The Best Air Fryer Potatoes

Potatoes are always a big hit, especially fried, of course! If you want a a GOOD potato wedge that is not fried, this is it. You may even think your potato side this holiday season and add some potato wedges to the menu.

Why we love these potatoes

No peeling the skin. For this recipe, you only need to wash the potatoes really well. You do have the option to peel them, but they are delicious and tender with the peel.

Full of flavor. A good flavorful potato wedge is everything, this seasoning has a good smokey flavor, it’s garlicky, and a good sharpness from that parmesan cheese!

Vitamin C boost. Did you know that yukon gold potatoes are full of vitamin C? One medium yukon gold has half a days worth of vitamin, and twice as much as a russet potato.

Do you need an Air Fryer for this recipe?

First of all, you do need an air fryer for this recipe. Second, it CAN be made in the oven!

How to make potato wedges in the oven

If you don’t have an air fryer, we’ve got you covered! Preheat oven to 400 degrees F.  Arrange the potatoes in a single layer. Bake for 25-30 minutes, making sure to flip half way through the baking time.

Should you spray the air fryer basket with cooking spray?

We do recommend spraying the basket with cooking spray, just to ensure that the potatoes don’t stick. Plus, everyone has a different air fryer and some may stick more than others.

Different types of potatoes

There is no rule on which potato you should use. You can substitute with red potatoes or russet. Be careful with the cooking times as each potato cooks differently based off the size

How to make air fryer potato wedges

  1. In a medium saucepan bring water to a boil. Add potatoes and reduce heat to a gentle simmer. Boil for 5-6 minutes. Strain and set aside. (*See note below)
  2. In a medium bowl, toss the dried potatoes wedges with olive oil, paprika, chili powder, Italian seasoning, pepper, salt, garlic, and Parmesan cheese.
  3. Select AIR FRY on your air fryer, set temperature to 375°F, and set time to 18 minutes. Press the setting dial to begin preheating.
  4. While unit is preheating, arrange potato wedges in the Air Fry Basket, making sure they are not crowding each other. When unit has finished preheating, open door, and slide the basket into the top rails. Close door to begin cooking.
  5. After 10 minutes, use silicone-tipped tongs to flip the potato wedges. Close door to finish cooking.
  6. When cooking is complete, remove the basket from the oven and garnish potato wedges with Italian parsley.

Ingredients
  

  • 4-6 medium Yukon gold potatoes (cut in 1-inch wedges (warm water as necessary, for soaking))
  • 3 tbsp extra virgin-olive oil
  • 2 tsp smoked paprika
  • 3 tsp chili powder
  • 3 tsp dried Italian seasoning
  • 1/2 tsp ground black pepper
  • 2 tsp kosher salt
  • 3 cloves garlic (peeled, minced)
  • 1/3 cup grated parmesan cheese
  • 1/4 cup fresh chopped Italian flat leaf parsley

Instructions
 

  • In a medium saucepan bring water to a boil. Add potatoes and reduce heat to a gentle simmer. Boil for 5-6 minutes. Strain and set aside. (*See note below)

  • While unit is preheating, arrange potato wedges in the Air Fry Basket, making sure they are not crowding each other. When unit has finished preheating, open door, and slide the basket into the top rails. Close door to begin cooking.
  • After 10 minutes, use silicone-tipped tongs to flip the potato wedges. Close door to finish cooking.

If you don't want to boil the potatoes, here are instructions for soaking:
Place the potato wedges in a large bowl and cover with water as necessary. Let soak for 30 minutes, then strain and pat dry.

How to make without boiling the potatoes first

If you don’t want to boil the potatoes, you can soak them instead. Place the potato wedges in a large bowl and cover with water as necessary. Let soak for 30 minutes, then strain and pat dry.

What happens when you soak potatoes before air frying?

Soaking the potatoes helps release some of the starches, which results in crispier fries. The key is to completely dry the potatoes before adding the olive oil and seasoning.

How to avoid soggy air fried potatoes

The key to making sure the wedges do not get soggy is making sure the potatoes are dry before you continue on with the recipe. Soggy potatoes come from extra moisture.
