Air Fryer Potato Wedges Recipe Common Questions
Za’atar adds a herby, lemony, slightly nutty vibe that totally wakes up roasted potatoes. It’s earthy but bright, and when it hits those crispy air-fried edges? Game. Changer.
Oh yes! That’s kind of the air fryer’s whole personality. As long as you don’t overcrowd the basket and you give them a light toss in oil, they come out golden, crunchy, and irresistible—without deep-frying.
Dried za’atar is the way to go—it’s actually a spice blend that already includes herbs like thyme and oregano, plus sumac and sesame seeds. No chopping, no fuss—just toss it on and go.
For sure. You only need a little oil to get that crispy texture, so they’re lighter but still totally satisfying. It’s the snack that feels indulgent but doesn’t leave you in a food coma.

What is the white sauce you are serving them with?
Hummus! We hope you enjoy, Sandrine. 😊

You said soaking potatoes in cold water makes them crispier but I can’t see in recipe where you soak in cold water, just wondering.
Soaking the potatoes isn’t necessary, but you can if you prefer an even crispier texture!

This recipe looks delicious! I even have Zaartar! I would love to make but (don’t hate me) I ditched my air fryer – just didn’t like its results. Could I make in oven? Season/coat potatoes before roasting??
Thank you! Happy New year!
These turned out perfect. I love this website!
Also I saved my potato water and used it to make bread.
Amazing! Ohh we love that idea!
I tried to order za’tar on Amazon and was told it is sold out – is there a reliable online source for this spice mix?
You can usually find it here!
