Common Questions About Parmesan Potatoes

Should I boil my potatoes first?

You can boil them briefly before roasting to get extra crispiness. You can also soak them in cold water before roasting to remove excess starch to ensure crispness.

Why does parmesan cheese not melt?

Very hard cheeses do not melt like soft and semi-soft cheeses which is what makes parmesan the best cheese to get exactly the right texture and coating for these potatoes.

  1. 5 stars
I didn’t have baby potatoes, so I used the russets that I had on hand. Peeled and sliced lengthwise into thick slices, soaked them in cold water for a half hour or so. Then followed the rest of the directions. Delicious! Will definitely make them again.

  2. This looks so yummy.. how could this be made in the air fryer?? I just got one & would love to try it

    1. We haven’t tested it, but it might work! We would line the air fryer with parchment paper and cooking the potatoes at 400 degrees. 😊
