Score potatoes about 1/4-inch-deep in a diamond pattern (crosshatch).1 1/2 pounds baby potatoes
Add potatoes cut-side of each potato in the pan.
Bake until the potatoes are tender and the Parmesan creates a golden crust on the bottom of the potatoes, about 20-25 minutes.
Let stand 5 minutes before using a spatula to release potatoes from pan.

If you want even crispier potatoes, soak them for 30 minutes to 24 hours ahead of baking.Using freshly grated parmesan will result in the freshest flavor.
