Ingredients You’ll Need

The beauty of this spiraled cucumber yogurt salad lies in its simplicity, using ingredients you probably already have or can easily grab from the store. Here’s what you’ll need:

  • Yogurt – This forms the base of the spread that is used to top the cucumbers. For the boldest flavor and creamiest texture, we recommend using full-fat, plain Greek yogurt, but any plain yogurt will do.
  • Flavor Enhancers – Garlic cloves, fresh dill, and crushed red pepper create a savory flavor with the perfect combination of freshness and spice.
  • Olive Oil – This thins out the yogurt making it sauce-like while adding a boost of healthy fats. We recommend using light olive oil as it has a neutral flavor, but whatever you have on hand is great.
  • Cucumber – Use small cucumbers for easy spiraling and individual portions.

How to Make Spiraled Cucumber Yogurt Salad

While this cucumber yogurt salad may look fancy, the truth is, once you have those cucumbers sliced, it’s a piece of cake to make!

  1. Prepare the Cucumbers. Wash the cucumbers, and slice off both ends. Then slice them into spirals by making small diagonal cuts down both sides, and soak them in salt.
  2. Create the Sauce. Whisk all of the ingredients for the yogurt sauce together in a small bowl.
  3. Coat the Cucumbers. Dip, dunk, or drizzle the cucumbers with the yogurt sauce, and enjoy!

  • Slicing. For a quicker recipe, slice the cucumber into slices instead.
  • Adding Veggies. Include extra vegetables like sliced onions or radishes.
  • Using Sugar. If you prefer a sweeter recipe, include a pinch of sugar to offset some of the tanginess of the yogurt.

Cucumber Yogurt Salad Common Questions

How do you keep the cucumber from getting soggy?

Don’t skip salting the cucumbers! This helps draw out extra moisture. In addition, if you plan on slicing them ahead of time, wrap each sliced cucumber in a paper towel. Then, transfer them to a sealable bag or airtight container, and store them in the fridge.

Do you peel the cucumber for this recipe?

Nope! The peel helps them hold their shape and adds extra fiber.

Can I make cucumber yogurt salad ahead of time?

Yes, transfer your cucumber yogurt salad to an airtight container, and store it in the fridge for up to 2 days. Or, prepare the yogurt sauce ahead of time, and keep it in the fridge for up to 3 days.
