Ingredients for Strawberry Agua Fresca
- Strawberries. Fresh, ripe, fragrant berries give the best flavor. If your berries are a little flat, taste the blended base before adding the milk and sweeten it if you need to.
- Water. Even with all the milk, you’ll need the water to keep the texture light.
- Milk. This is what makes the drink creamy and gives it its signature shade. Whole milk produces the richest result, but 2% will work, too.
- Sweetened condensed milk. Since condensed milk is made by removing most of the water from regular milk and adding sugar, it both sweetens and thickens the drink, so there’s no need to measure sugar or dissolve anything! - Ice. For serving. Chill the pitcher in the fridge before pouring, then serve the drink in glasses over plenty of ice.

These are a few tips that will take your aqua fresca from good to great!
- Avoid over-blending. You want to blend until the mixture is smooth, but not incorporate too much air. Over-blending creates foam that can make the liquid look cloudy and slightly grayish once the milk is added. Blend just until the strawberries are fully liquefied.
- Take the time to strain. After blending the strawberries, pour the mixture through a fine-mesh sieve into your pitcher. Use the back of a spoon to press the pulp against the sieve. The little seeds are gritty in a drink, and straining removes them completely for the smoothest texture. Cheesecloth also works if your sieve has larger holes.
- Reserve the fresh strawberries. Our recipe calls for holding back ½ pound of strawberries before you blend. At the end, you finely chop these and stir them into the finished drink. We love the little bursts of texture and the way the pieces float — it looks exactly like something you’d find at a market.
- Taste before you finish. Before chilling, take a sip and adjust. Add more condensed milk, a tablespoon at a time, if it’s not sweet enough, and add more water if it’s too thick.

Freezing: We don’t recommend freezing the finished drink because the milk may separate when it thaws.
