Chocolate Pots De Creme
- 9 ounces high-quality dark chocolate 60% or greater
- 1 cup whole milk
- ⅓ cup espresso or strong brewed coffee slightly cooled*
- 1 ¼ cups heavy cream
- 6 extra large egg yolks room temperature
- ½ cup granulated sugar
- ¼ teaspoon salt
- 2 teaspoons pure vanilla extract
- Optional: whipped cream and berries for serving
- Chop the chocolate, and place it in a high-speed blender. Set aside.
- In a large heavy-bottomed pot, add the milk, cream, egg yolks, espresso, sugar, and salt. Whisk to combine.
