For the Salad:

  • 4 large eggs hard-boiled and chopped
  • 6 cups green leafy lettuce chopped (such as Romaine or Butterhead)
  • 2 medium tomatoes diced
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/2 cup artichoke hearts drained and chopped
  • 1/2 cup crumbled feta cheese
  • 1 ripe avocado diced
  • Optional: feta cheese fresh herbs, ground black pepper for garnish

For the Dressing:

  • 1/3 cup olive oil
  • 1 tablespoon yogurt
  • 2 Tablespoons vinegar such as red wine vinegar
  • 1 clove garlic finely minced
  • Salt to taste
  • Freshly ground pepper to taste


  • Hard-boil the eggs by placing them in a saucepan with water. Bring the water to a boil over high heat. Then, reduce the heat to a simmer and cook for 9-12 minutes. Transfer the eggs to an ice bath to cool. Then, peel, and chop them.
