The BEST Chocolate Peanut Butter Oatmeal Bake Recipe

Chocolate for breakfast? Uh, yes, please! But why stop at that? This recipe features chocolate AND peanut butter for a mouth-watering breakfast option.

This peanut butter oatmeal bake is so easy to make that it really is as simple as mixing the ingredients together. Plus, the ingredient list is simple and even hides a serving of fruit inside the chocolatey peanut butter goodness. The only hard part is waiting for it to bake!

Make this ahead of time for a quick breakfast on busy weekdays. Or, serve it hot out of the oven for the perfect Saturday morning treat.

What Is an Oatmeal Bake Recipe?

Think of it like classic oatmeal, but way upgraded! Oatmeal bakes are a great way to hide nutrient-dense ingredients in your breakfast while still enjoying a yummy meal first thing in the morning. They are also highly adaptable, so while this recipe draws on a sweet chocolate peanut butter flavor, you could get creative and explore different flavor profiles like this Banana Bread Oatmeal or Baked Pumpkin Oatmeal, too.

Is This Oatmeal Bake Recipe Good for You?

Yes! There are plenty of nutritious ingredients packed into this baked oatmeal. For instance, aats are naturally rich in fiber which helps keep you full longer and benefits gut health. Add in peanut butter for healthy fats, eggs for extra protein, and milk for a dose of calcium, and vitamin D, and it’s one recipe you can feel good about!

Plus, it contains 3 whole bananas that not only make it taste like dessert but also pack in lots of potassium, copper, and vitamin C. Who said chocolate can’t be good for you? They obviously never crossed paths with this chocolate peanut butter oatmeal bake recipe!

What You’ll Need

Contrary to popular belief, you don’t need any fancy ingredients to make a nutritious and tasty oatmeal bake recipe. In fact, we bet you probably already have everything you need.

  • Bananas – These help bind your oats together. The riper the better!
  • Peanut Butter – We recommend creamy Old Home Peanut Butter because it’s all natural and super yummy. However, any peanut butter you like best will taste great.
  • Whole Milk – Feel free to swap out whole milk for your milk of choice.
  • Maple Syrup – Maple syrup will add an extra sweet and gooey element to these baked oats without the need for refined sugar.
  • Vanilla Extract – A classic flavor enhancer that makes your oatmeal bake even more chocolatey.
  • Eggs – These will help give your oatmeal the perfect structure and a dose of healthy fats and extra protein.
  • Rolled Oats – Rolled oats are a must for this baked oatmeal recipe! If needed, look for a brand that is certified gluten-free.
  • Cocoa Powder – One of two chocolate ingredients that create the mouth-watering chocolate flavor.
  • Salt – Another flavor enhancer for this recipe.
  • Chocolate chips – Mini chocolate chips melt most cohesively with the rest of the baked oats, but any size chocolate chips will do in a pinch.

Can I Use Steel Cut or Quick Oats?

Technically, you can, but we don’t recommend it! Each type of oat requires a slightly different cook time and amount of liquid. For instance, steel-cut oats require more liquid to cook plus a longer bake time. Meanwhile, quick oats cook faster and often end up softer than other varieties. As a result, swapping out the rolled oats will result in a completely different texture and might not turn out well.

How to Make the BEST Chocolate Peanut Butter Oatmeal Bake Recipe

This recipe is so easy that you’ll be tempted to skip stovetop oatmeal from here on out. Here’s what to do:

  1. Combine the Wet Ingredients. In a large bowl, mash the bananas with a fork until a smooth purée is formed. Then, add the remaining wet ingredients, and whisk to combine.
  2. Mix the Dry Ingredients. In the same bowl, add the oats, cocoa powder, and salt, mixing until well combined. Fold in the chocolate chips.
  3. Bake. Pour the mixture into a greased baking dish, drizzle the remaining peanut butter on top, and add an extra sprinkle of chocolate chips. You can never have too much chocolate! Place the mixture in the oven until it has thickened and set.
  4. Serve. Let your oatmeal bake recipe cool slightly. Then, slice it into squares, and enjoy warm. Or, pop them in the fridge to chill for later!
