Ingredients 
 

  • 4 chicken breasts pounded thin
  • 1 tablespoon Greek Seasoning
  • 1/2 large English cucumber peeled
  • 1 cup plain Greek yogurt
  • 1 garlic clove grated
  • 1 teaspoon vinegar
  • 1/2 teaspoon salt more or less to taste
  • 1 teaspoon dried mint
  • 1/2 teaspoon dried dill optional

Dressing

  • 2 ounces block feta
  • 4 tablespoons tahini paste
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1 garlic clove
  • 4 tablespoons water more as needed
  • 1/2 teaspoon sea salt to taste
  • 1/2 teaspoon black pepper

Salad

  • 6 cups roughly chopped romaine lettuce or your favorite greens
  • 1 small sliced red onion
  • 1/2 cup pitted kalamata olives
  • 1 medium chopped English cucumber
  • 1/2 cup grape tomatoes sliced in half

Instructions 

  • Start by making the cucumber sauce. Use a box grater and grate the cucumber. In a large bowl, add the grated cucumber, yogurt, vinegar, salt, and dried mint (and dill, if using). Mix until combined.

  • In a large bowl, add the chicken breast, cucumber sauce, and Greek seasoning. Mix until the chicken is completely covered in the yogurt. Marinate for at least 4 hours or overnight.

  • On a grill pan on medium- high heat add the chicken. Cook 4-5 minutes on each side or until juices run clear and cooked through.
  • In a food processor or blender, add feta, tahini, lemon juice and zest, garlic, water, salt, and pepper.

  • Blend until creamy.
  • Using romaine as a base, build your salad, topping with red onion, Kalamata olives, cucumber, and tomatoes.
    6 cups roughly chopped romaine lettuce, 1 small sliced red onion, 1/2 cup pitted kalamata olives, 1 medium chopped English cucumber, 1/2 cup grape tomatoes
  • Add sliced chicken on top.
  • Dress salad, and mix together

    I only used 2 chicken breasts (400g) but that was enough for our family of 4. I probably didnt need as much marinade. I added a bit of pasta for the kids.
