Sweet, savory, salty, crisp, and creamy, this whipped feta watermelon dip has it all and then some! Quick to prepare and oh-so-easy, it's our favorite appetizer or snack for spring and summer but is so irresistible we serve it all year long.

Ingredients  

Whipped Feta Ingredients:

  • 8 ounces feta cheese
  • ½ cup cottage cheese
  • 1 –2 tablespoons water for thinning, as needed

Salad Ingredients:

  • 5-6 cups seedless watermelon diced
  • 3 Persian cucumbers thinly sliced
  • Juice of 1 lemon about 2 tablespoons
  • Fine sea salt and freshly-ground black pepper to taste
  • 2-3 Tablespoons fresh mint leaves finely chopped

Instructions 

Make the whipped feta:

  • In a food processor or blender, combine the feta cheese and cottage cheese. Blend until smooth. Add water 1 tablespoon at a time until the mixture reaches a creamy, spreadable consistency. Set aside or chill until ready to use.
    8 ounces feta cheese, ½ cup cottage cheese, 1 –2 tablespoons water

Prepare the salad:

  • In a large bowl, combine the diced watermelon, sliced cucumbers, lemon juice, mint, and a pinch of sea salt and black pepper. Toss gently to mix.
