Whipped Cottage Cheese Dip

  • Cottage Cheese – Full-fat varieties will provide the best taste and texture. However, low-fat options will also work. 
  • Tahini – A smooth paste made from sesame seeds, this creates a velvety, slightly thick texture and adds a nutty taste. 
  • Yogurt – We recommend using plain, full-fat Greek yogurt, but regular yogurt also works. 
  • Feta Cheese – This adds a tangy flavor that pairs fabulously with the buttery beans. For easy mixing, opt for crumbled feta instead of block varieties.

Marinate, Whip, Serve! How to Make Butter Beans and Cottage Cheese

  1. Prepare the cottage cheese dip. Add the cottage cheese, tahini, yogurt, and crumbled feta to the bowl of a food processor or blender. Pulse until the ingredients are smooth.

For the Dip:

  • 16 oz cottage cheese
  • 2 Tablespoons tahini
  • 1/4 cup yogurt
  • 4 ounces crumbled feta
  • 2 Tablespoons water for thinning

For the Topping:

  • 1 can butter beans
  • 4 Tablespoons olive oil
  • 1/2 teaspoon salt
  • 3 tablespoons chives
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon butter beans

Instructions 

Start by making the dip:

  • In a blender or food processor, combine the cottage cheese, tahini, yogurt, and crumbled feta.
    16 oz cottage cheese, 2 Tablespoons tahini, 1/4 cup yogurt, 4 ounces crumbled feta
  • Blend the mixture until smooth.
  • If the dip is too thick, add 2 tablespoons of water and blend again until the desired consistency is achieved. Add more water if needed.

Prepare the topping:

  • Drain and rinse the canned butter beans.

Marinate the butter beans:

  • In a separate bowl, mix the drained butter beans with 4 tablespoons of olive oil, 1/2 teaspoon of salt, chopped chives, paprika, oregano and the additional 1/2 teaspoon of butter beans. Toss everything together until well coated. Set aside for at least 30 minutes.

Assemble:

  • To serve, spread the whipped cottage cheese dip on a plate or in a shallow dish.

    I’m working my way through your recipes for different dips. This was first up. Delicious! My husband loved the beans so I had to make a double batch of just the beans. So much flavor in these simple ingredients. I think I’ll do the roasted tomato dip next. I made your chopped Italian salad three times for our monthly church potluck. I multiplied the recipe 5x and it was devoured each time.
