What are ground beef tortilla rounds with onion and parsley?

Ground beef tortilla rounds with onion and parsley are savory, roll-up style bites made by spreading a seasoned beef mixture over flour tortillas, rolling them up, slicing them into rounds, and baking until golden. The result is a crispy-on-the-outside, juicy-on-the-inside appetizer or snack that’s packed with flavor. The combination of the warm, spiced beef, the sweetness from onion, and the freshness from the parsley makes them absolutely irresistible.

This recipe is inspired by the flavors of taco night but served in a totally different way. Instead of a traditional shell, the filling gets rolled into soft tortillas, creating a beautiful spiral when sliced. They’re great for parties, game-day spreads, or just as a fun twist on dinner. Plus, they’re endlessly versatile—you can change up the seasoning, fillings, or even the tortillas to suit your taste.

Ingredients You Need

  • Ground Beef – We love using beef because it’s rich, savory, and soaks up the seasoning perfectly for maximum flavor!
  • Taco Seasoning – This adds warm, spiced flavor that pairs perfectly with beef and onions. Making it from scratch lets you control the heat level.
  • Onion – Finely chopped onion adds sweetness and depth as it cooks with the beef. Chopping it yourself ensures the best flavor and texture.
  • Fresh Parsley – Parsley adds a fresh, herbaceous brightness that balances the richness of the beef. It also adds a pop of green color to the filling.
  • Flour Tortillas – These are the perfect base for holding the filling and rolling into tight spirals. Using large tortillas helps create bigger, more even rounds.
  • Olive Oil Or Melted Butter – Brushing one of these on top before baking adds flavor and helps the tortillas crisp to a beautiful golden brown. Choose butter for richness or olive oil for a lighter, savory finish.

How to Make Ground Beef Pinwheels

  1. Mix the filling. Stir together the ground beef, taco seasoning, onion, and parsley until everything is evenly distributed.
  2. Spread and roll. Place a tortilla on a clean work surface and evenly spread the beef mixture all the way to the edge. Roll the tortilla up snugly from one side to the other. Repeat with the remaining tortillas and beef mixture.
  3. Slice into rounds. Using a sharp knife, cut the rolled tortillas into even slices.
  4. Arrange and brush. Lay the rounds down on a prepared baking sheet, nestling them close together. Use a pastry brush to apply the olive oil or melted butter to the top to encourage browning.
  5. Bake to perfection. Bake until the tortilla edges are golden and crisp and the beef is cooked through, flipping the rounds halfway through for even cooking.
  6. Serve and enjoy. Serve the rounds fresh out of the oven with condiments like salsa, sour cream, or dipping sauce.

Variations

  • Cheese – Sprinkle shredded cheddar or Monterey Jack over the beef before rolling for a melty upgrade.
  • Spice – Add diced jalapeños or a pinch of cayenne to the filling for extra heat.
  • Mediterranean – Swap taco seasoning for a mix of cumin, paprika, and garlic powder, and serve with tzatziki.
  • BBQ – Mix a little barbecue sauce into the beef mixture and serve with extra sauce for dipping.
  • Veggies – Add finely chopped bell peppers or spinach to the filling for extra color and nutrients.
  • Gluten-Free Option – Swap flour tortillas for gluten-free tortillas and adjust the baking time as needed.

Can I Store Leftovers?

Leftovers can be stored, but the tortillas will lose some of their crispness. Reheating in the oven or air fryer helps bring back the texture.

Store in an airtight container in the refrigerator for up to 3 days.

Freeze in a single layer on a baking sheet before transferring to a freezer bag for up to 2 months.

Common Questions about Ground Beef Pinwheels

Do I need to cook the beef before rolling it in the tortillas?

Nope! The beef cooks fully in the oven, making the process faster and keeping the filling moist.

Can I make these ahead of time?

Yes! You can assemble and slice them a few hours in advance, then refrigerate until you’re ready to bake.

Can I use corn tortillas instead?

You can, but they’re less flexible and may crack when rolling—warming them first helps.

Can I make this with a different meat?

Absolutely! Ground turkey, chicken, or even lamb would work—just adjust the seasoning to match the meat.

Made these today to go with soup and they turned out perfect! I grind my own chicken breast so that’s what I used today. Even though I spread the meat mixture really thin on the tortillas, they still needed a longer bake time of about 35โ€“40 minutes before my thermometer confirmed they reached 165ยฐF. Totally worth the wait thoughโ€ฆ super tasty! Thank you!

  2. When you say “flipping halfway” through the baking time, do you mean rotate the pan or do you mean get a spatula under the pinwheels and flip them (over)?

    1. Either will work! We find they hold their shape a little better with a baking dish.

      We hope you enjoy!
