These baked taco pinwheels are a fun, bite-sized twist on taco night! Flour tortillas are filled with a seasoned ground beef mixture, rolled up, sliced, and baked until golden and crispy. They make an easy appetizer, game day snack, or quick dinner, especially when served with salsa, sour cream, or guacamole for dipping.

Ingredients

  • 1 pound ground beef raw
  • 1 packet taco seasoning or 2 Tablespoons homemade taco seasoning
  • 1 small onion finely chopped
  • ¼ cup fresh parsley finely chopped
  • 4 –5 large flour tortillas
  • Olive oil or melted butter for brushing

Instructions

  • Preheat the oven to 450°F (232C°).

Prepare Beef Mixture

  • In a mixing bowl, combine ground beef, taco seasoning, chopped onion, and parsley.

  • Mix until evenly blended.

Assemble Rolls

  • Lay one tortilla flat on a clean surface.

  • Spread a thin, even layer of the raw beef mixture over the tortilla, going right to the edges.

Roll & Slice

  • Roll the tortilla up tightly from one end.
  • Slice into 1–1.5 inch thick rounds using a sharp knife.

Bake

  • Arrange the rounds flat on the baking sheet.

  • Brush the tops lightly with olive oil or melted butter.
