- ¼ cup crumbled feta cheese
- 2 Tablespoons olive oil
For the Marinated Tomatoes:
- 2 cups baby tomatoes quartered
- ¼ cup fresh parsley chopped
- ¼ cup fresh basil chopped
- 3 Tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: pita chips and crostini for serving
Instructions

I really wanted to love this recipe, but the cottage cheese mixture was so liquidy that I found it off-putting. The tomato topping is delicious, but I’d prefer a thicker texture for the cottage cheese. maybe if I blended in more feta or some white beans. Could also depend on the brand and type of cottage cheese. Creative recipe though.

I found the same thing the first time I made this dip so I actually whipped the cottage cheese and feta mixture longer in my blender or food processor future times that I have made it and added more feta and it made a world of difference!
