Easy S’mores Brookie

Ingredients for S’mores Brookies
- brownie mix, made according to package instructions
- Refrigerated cookie dough
- graham crackers
- mini marshmallows
- chocolate chips
How to make homemade chocolate chip cookie dough
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 3/4 cup melted unsalted butter
- 3/4 cup packed light brown sugar
- 3/4 cup granulated sugar
- 2 tsp vanilla extract
- 1 egg + 1 egg yolk (at room temperature)
- 2 cups semisweet chocolate chips
In a medium bowl, cream together melted butter, brown sugar and white sugar until well blended. Beat the vanilla, and eggs until light and creamy. Mix dry ingredients until stir just until blended. Stir in the chocolate chips.
How to make s’mores brookies (short cut method)
- Preheat the oven to 350 degrees F.
- Make the brownie batter according to package instructions.
- In a buttered 13×9 baking dish add prepared brownie mix. Arrange graham crackers over the brownie batter. Add the marshmallows and chocolate chips.
- Top with the cookie dough, you want to try to flatten it out to cover the marshmallows. Bake for 30-35 minutes or until a toothpick comes out clean. If the top starts to brown cover with foil. Let cool completely before cutting into bars.
- Option: dig in while it is warm and top with a scoop of vanilla ice cream!
