For the Tiramisu:
- 12 ounces mascarpone cheese
- 1/3 cup powdered sugar
- 2 cups cold heavy cream
- 2 teaspoons vanilla extract
- 2 teaspoons lemon zest
- 1/2 cup milk
- 2 Tablespoons strawberry preserves
- 7 ounces ladyfingers
For the Macerated Strawberries:
- 16 ounces strawberries hulled and sliced
- 2 Tablespoons granulated sugar
- 3 teaspoons lemon juice
Prepare the Macerated Strawberries:
In a bowl, combine the sliced strawberries, granulated sugar, and lemon juice.
16 ounces strawberries, 2 Tablespoons granulated sugar, 3 teaspoons lemon juice
Stir to coat the strawberries evenly and let them sit for 1 hour to macerate.
Prepare the Tiramisu Filling:
In a large mixing bowl, combine the mascarpone cheese and powdered sugar. Mix on low speed until just combined.
12 ounces mascarpone cheese, 1/3 cup powdered sugar
Add heavy cream, vanilla extract, and lemon zest. Continue mixing on low speed until well combined.
2 cups cold heavy cream, 2 teaspoons vanilla extract, 2 teaspoons lemon zest
Gradually increase the speed every minute, ensuring the heavy cream whips up nicely and avoiding over-beating. Stop as soon as the mixture thickens to medium peaks to prevent separation.
Prepare the Strawberry Dipping Mixture:
In a small bowl, combine the milk and strawberry preserves, stirring until well blended.
1/2 cup milk, 2 Tablespoons strawberry preserves
Assemble the Tiramisu:
Briefly dip each ladyfinger into the strawberry dipping mixture, making sure they are coated but not soggy.
7 ounces ladyfingers
Arrange a layer of dipped ladyfingers in the bottom of your serving dish.
Spread half of the mascarpone mixture over the ladyfingers.
Add a layer of macerated strawberries on top of the mascarpone.
Repeat the layers with the remaining dipped ladyfingers, mascarpone mixture, and macerated strawberries.
Chill and Serve:
Cover the tiramisu and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
Before serving, you can garnish with extra strawberry slices or a dusting of powdered sugar if desired. Enjoy!
