Brownie Layer

  • 1 (16 ounce) package brownie mix (prepared according to package instructions)

Cookie Layer

  • 2 ¼ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ¾ teaspoon sea salt
  • 1 cup unsalted butter softened
  • ¾ cup packed light brown sugar
  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 eggs room temperature
  • 1 ½ cups semisweet chocolate chips
  • 1 cup chopped Oreo cookies

Instructions

  • Preheat Oven: Preheat your oven to 350°F Grease or line a 9x13-inch baking pan with parchment paper.
  • Prepare Brownie Batter: Make the brownie batter according to the package instructions. Set aside.

  • Make Cookie Dough: In a bowl, whisk together the flour, baking soda, and sea salt. In another large bowl, beat the softened butter, brown sugar, and granulated sugar until fluffy. Mix in the vanilla and eggs until smooth. Gradually add the dry ingredients, then fold in the chocolate chips and chopped Oreos.
    2 ¼ cups all-purpose flour, ¾ teaspoon baking soda, ¾ teaspoon sea salt, 1 cup unsalted butter, ¾ cup packed light brown sugar, ¾ cup granulated sugar, 2 teaspoons vanilla extract, 2 eggs, 1 ½ cups semisweet chocolate chips, 1 cup chopped Oreo cookies
  • Arrange the cookie dough over the brownie batter.
  • Bake for 30-35 minutes or until you gently move the pan and it no longer jiggles. If the top is browning too fast, feel free to loosely cover with aluminum foil.
  • Let cool completely before cutting into bars.

Notes

*We use Betty Crocker brownie mix, but any boxed variety that calls for a 13x9 baking dish wil work great. 
To freeze, transfer the bars to an airtight container or sealable bag. Store in the freezer for up to 2-3 months. Let them thaw in the fridge overnight and come to room temperature before serving.
