Mediterranean-Inspired Grape Salad Recipe

Ingredients

Grape Salad

  • 2 pounds green seedless grapes
  • 2 pounds red seedless grapes
  • 8 ounces mascarpone
  • 8 ounces full fat plain Greek yogurt
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Topping

  • ¾ cup brown sugar
  • 3/4 cup crushed walnuts to taste
  • Pinch of salt

Instructions

  • Wash and stem grapes. Set aside.

  • Mix mascarpone, Greek yogurt, powdered sugar, and vanilla with a hand mixer until blended.

  • Stir grapes into mixture, and pour in large serving bowl.

  • For topping: Combine brown sugar, crushed walnuts, and salt.

  • Sprinkle over top of grapes to cover completely.

Notes

Storage: Transfer leftovers to an airtight container, and store them in the fridge for up to 5 days.
