Smoked Salmon Cucumber Rolls with Avocado

- 1 large English cucumber
- 3 ounces smoked salmon
- 1 avocado mashed
- Salt to taste
- Black pepper to taste
- Black Sesame Seeds on top
Thoroughly rinse the cucumber, and slice off both ends.

Using a vegetable peeler, slice the cucumber into long, thin strips. NOTE: When the seedy part is reached, turn the cucumber, and slice on the other side. There will be roughly 5-6 strips per side.
Slice the smoked salmon into bite-sized strips, and layer them on top of each other.
3 ounces smoked salmon
Use a paper towel or parchment paper to pat the cucumber strips dry, absorbing any excess moisture.
Spoon the mashed avocado over the cucumber near one end. Then, layer the salmon pieces on top.

Roll the cucumber strips over themselves, securing the roll tightly. Spear with a toothpick to hold the roll together, if desired.
Slice the cucumber roll into bite-sized pieces. Season the rolls with salt, pepper, and black sesame seeds to taste.
