Oven-Baked Chipotle Chicken Skewers

- 2 pounds boneless skinless chicken breasts
- 1/2 lemon fresh lemon
- 1/3 cup Bitchin' Kitchen Sauce
- 1/2 teaspoon sea salt
- Black pepper to taste
- 1 medium red onion
- 1 medium yellow bell pepper
- 1 medium green bell pepper
- 1 medium orange bell pepper
Cut chicken breasts into chunks and place them in a large bowl.
2 pounds boneless skinless chicken breasts
Add a squeeze of lemon, Bitchin sauce, salt, and pepper to the bowl.

Mix everything together using a spatula or your hands. If you have time, marinate this overnight or at least 1 hour.
Chop up your red onions and peppers into 1-inch chunks.

Build your skewers, alternating chicken with veggies.
Cook in the oven at 375 degrees for 25-30 minutes (or on a grill), until vegetables are slightly charred and chicken is thoroughly cooked.
