Oven-Baked Chipotle Chicken Skewers

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1/2 lemon fresh lemon
  • 1/3 cup Bitchin' Kitchen Sauce
  • 1/2 teaspoon sea salt
  • Black pepper to taste
  • 1 medium red onion
  • 1 medium yellow bell pepper
  • 1 medium green bell pepper
  • 1 medium orange bell pepper

Instructions

  • Cut chicken breasts into chunks and place them in a large bowl.
    2 pounds boneless skinless chicken breasts
  • Add a squeeze of lemon, Bitchin sauce, salt, and pepper to the bowl.
    1/2 lemon fresh lemon, 1/3 cup Bitchin' Kitchen Sauce, 1/2 teaspoon sea salt, Black pepper to taste
  • Mix everything together using a spatula or your hands. If you have time, marinate this overnight or at least 1 hour.
  • Chop up your red onions and peppers into 1-inch chunks.
    1 medium red onion, 1 medium yellow bell pepper, 1 medium green bell pepper, 1 medium orange bell pepper
  • Build your skewers, alternating chicken with veggies.
  • Cook in the oven at 375 degrees for 25-30 minutes (or on a grill), until vegetables are slightly charred and chicken is thoroughly cooked.
  • Serve and enjoy!
