Biscoff Cinnamon Rolls

Ingredients

  • 1 stick unsalted butter
  • ½ cup light brown sugar packed
  • ¾ cup heavy cream
  • ½ cup cookie butter such as Biscoff
  • 2 teaspoons vanilla extract
  • 1 teaspoon kosher salt
  • 8 large cinnamon roll biscuits such as Grands
  • ½ cup semi-sweet chocolate chips
  • ½ cup white chocolate chips
  • ½ cup Biscoff cookies roughly chopped

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a 10-12 inch skillet, melt the butter over medium heat. Add the sugar, cream, cookie butter, vanilla extract, and salt, stirring continuously until combined.

  • Bring the mixture to a boil. Then, reduce the heat, and let it simmer for 1 minute to thicken.
  • Remove the skillet from the heat, and transfer half the mixture to a bowl. Set aside.
  • Arrange the cinnamon rolls in a single layer over the caramel sauce in the skillet.
    8 large cinnamon roll biscuits
  • Bake 30-35 minutes or until the cinnamon rolls are fluffy and golden brown.
  • Remove from the oven, and immediately pour the reserved caramel on top followed by the chocolate chips and Biscoff cookies.
    ½ cup semi-sweet chocolate chips, ½ cup white chocolate chips, ½ cup Biscoff cookies
  • Cool slightly, and enjoy!
  • Store in an airtight container in the fridge for up to 1 week.
