  • 1 Tablespoon cornstarch
  • 3 Tablespoons 45ml warm water
  • 1 pound strawberries hulled and sliced in half
  • 1/4 cup 50g granulated sugar
  • 4 slices of your favorite bread e.g., sourdough, whole grain
  • 1 cup ricotta cheese
  • Honey optional, for drizzling
  • Fresh mint leaves optional, for garnish

Instructions

Prepare the strawberry mixture:

  • In a small bowl, mix 1 tablespoon of cornstarch with 3 tablespoons of warm water until it is fully dissolved. Set aside.

  • In a medium saucepan, add the hulled and sliced strawberries along with the 1/4 cup of granulated sugar. Stir to combine.

  • Place the saucepan over medium heat and cook, stirring occasionally, until the strawberries begin to release their juices and soften, about 5-7 minutes.
  • Add the cornstarch mixture to the strawberries. Stir continuously until the mixture thickens, about 2-3 minutes.
  • Remove the saucepan from the heat and let the mixture cool.

Prepare the toast:

  • While the strawberry mixture is cooling, toast your slices of bread until they are golden brown and crispy.

  • Spread a generous amount of ricotta cheese on each slice of toast.

Assemble the ricotta toast:

  • Spoon the cooled strawberry mixture over the ricotta cheese on each toast slice.
  • Drizzle with honey, if desired, for added sweetness.
