1 Medium Saucepan

- 1 Tablespoon cornstarch
- 3 Tablespoons 45ml warm water
- 1 pound strawberries hulled and sliced in half
- 1/4 cup 50g granulated sugar
- 4 slices of your favorite bread e.g., sourdough, whole grain
- 1 cup ricotta cheese
- Honey optional, for drizzling
- Fresh mint leaves optional, for garnish
Prepare the strawberry mixture:
In a small bowl, mix 1 tablespoon of cornstarch with 3 tablespoons of warm water until it is fully dissolved. Set aside.

In a medium saucepan, add the hulled and sliced strawberries along with the 1/4 cup of granulated sugar. Stir to combine.

Place the saucepan over medium heat and cook, stirring occasionally, until the strawberries begin to release their juices and soften, about 5-7 minutes.
Add the cornstarch mixture to the strawberries. Stir continuously until the mixture thickens, about 2-3 minutes.
Remove the saucepan from the heat and let the mixture cool.
Prepare the toast:
While the strawberry mixture is cooling, toast your slices of bread until they are golden brown and crispy.

Spread a generous amount of ricotta cheese on each slice of toast.

Assemble the ricotta toast:
Spoon the cooled strawberry mixture over the ricotta cheese on each toast slice.
Drizzle with honey, if desired, for added sweetness.
