In a blender, add the fresh strawberries and blend until smooth.

In a bowl, combine the almond milk, maple syrup, and vanilla extract. Stir until well combined.
½ cup unsweetened almond milk, 2 teaspoons maple syrup, 1 teaspoon vanilla extract
Stir the chia seeds into the mixture until evenly distributed.

Gently fold the strawberry puree into the almond milk mixture, making sure everything is well mixed.
Pour the mixture evenly into serving cups or jars.
Spoon the plain Greek yogurt (or vanilla yogurt) on top of each cup.

Cover and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and create a pudding-like texture.
Once set, top with extra fresh strawberries and enjoy!
