  • 16 ounces fresh strawberries plus more for topping
  • ½ cup unsweetened almond milk or milk of choice
  • 2 teaspoons maple syrup or sweetener of choice
  • 1 teaspoon vanilla extract
  • ¼ cup chia seeds
  • ½ cup plain Greek yogurt or vanilla yogurt

Instructions

  • In a blender, add the fresh strawberries and blend until smooth.

  • In a bowl, combine the almond milk, maple syrup, and vanilla extract. Stir until well combined.

  • Stir the chia seeds into the mixture until evenly distributed.

  • Gently fold the strawberry puree into the almond milk mixture, making sure everything is well mixed.
  • Pour the mixture evenly into serving cups or jars.
  • Spoon the plain Greek yogurt (or vanilla yogurt) on top of each cup.

  • Cover and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and create a pudding-like texture.
  • Once set, top with extra fresh strawberries and enjoy!
