Topping:

  • cups all-purpose flour spooned into measuring cup and leveled-off
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 stick - ½ cup cold unsalted butter cut into small chunks
  • 1 cup milk
  • 2 Tablespoons Turbinado sugar or coarse sugar

Filling:

  • 1 cup blueberries
  • 1 cup strawberries sliced
  • 1 cup raspberries
  • 1 cup blackberries
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon zest
  • 1 Tablespoon cornstarch

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt.

  • Add the cold, diced unsalted butter to the dry ingredients. Using a pastry cutter or your fingers and, cut the butter into the dry mixture until it resembles coarse crumbs.

  • Stir in the milk, and mix until the dough comes together. Be careful not to overmix; the dough should be a bit lumpy!

  • For the filling, mix everything together in a bowl. Add to a 2 quart baking dish. Top with the cobbler mixture. And sprinkle the coarse sugar over the top.
    2 Tablespoons Turbinado sugar or coarse sugar, 1 cup blueberries, 1 cup strawberries, 1 cup raspberries, 1 cup blackberries, 1/2 cup granulated sugar, 1 teaspoon lemon zest, 1 Tablespoon cornstarch
  • Bake for 30-35 minutes or until the top is golden brown and bubbly.
  • Serve warm with a scoop of ice cream

Notes

Note: If using frozen berries, thaw and drain the excess water. Then, keep an eye on the oven, and adjust the baking time as needed.
