Ingredients

  • 2 cups sliced Persian cucumbers
  • 3 avocados diced
  • 1 cup chopped cilantro
  • ½ red onion thinly sliced and soaked in water for 10 minutes
  • Juice of ½ lemon
  • ¼ cup olive oil
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

Instructions

  • Add the cucumbers, avocado, cilantro, and red onion to a large bowl.

  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  • Pour the dressing over the salad and gently toss until everything is coated.
