- 8 large eggs
- ½ cup cottage cheese
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
- Choice of veggies such as diced bell peppers, spinach, or green onions
- 2 strips turkey bacon cooked and crumbled
Preheat your oven to 350°F. Lightly grease a 12-cup muffin tin or line with silicone muffin cups.
In a blender, combine eggs, cottage cheese, salt, and black pepper.
