In a large bowl, mix together almond flour, melted coconut oil, maple syrup, and vanilla extract until the mixture is smooth.

Fold in the chocolate chips.

Form the Bark:
Line a baking sheet with parchment paper.
Spread the cookie dough across the parchment paper, forming a flat, even layer. Use clean hands to press it down and shape it.
Chill the Bark:
Place the baking sheet in the freezer for about 5 to 10 minutes to allow the bark to set.
Prepare the Topping:
While the bark is chilling, melt chocolate chips, coconut oil and peanut butter and melt in microwave. Then add M&Ms. (Note: Heat in short bursts 20-30 seconds at a time) and stir until smooth and fully melted.
1/4 cup peanut butter, 1 teaspoon coconut oil, 1/2 cup M&Ms
Add the Topping:
Pour the melted chocolate, peanut butter, and M&M mixture over the chilled bark, spreading it evenly across the surface.
Return the baking sheet to the freezer and let it chill for at least an hour.
Finish and Enjoy:
Remove the baking sheet from the freezer.
Cut the bark into pieces and enjoy your delicious treat!
