Mason Jar Salad with Mango Recipe

Ingredients

For the Dressing:

  • 3 Tablespoons olive oil
  • 3 Tablespoons lemon juice freshly squeezed
  • 3 teaspoons dried oregano
  • Salt to taste
  • Black pepper to taste

For the Salad:

  • 3/4 cup feta cheese
  • 3/4 cup Manzanilla green olives or Kalamata olives whole or sliced
  • 1 1/2 cup cooked lentils
  • 1 1/2 cup tomatoes diced
  • 1/2 cup cucumber chopped
  • 1 cup mango chopped
  • 3 cups mixed greens or greens of choice

Instructions

  • Divide the salad dressing ingredients evenly among 3 mason jars. Whisk until smooth.
  • Layer ⅓ of the feta, olive, lentils, tomatoes, cucumbers, mango, and mixed greens on top of the dressing in each jar.
  • Seal, and store in the fridge for up to 5 days.
  • To serve, invert the ingredients onto a plate, and enjoy!

Notes

We add the feta first so it can marinate and soak up all the flavor of the dressing!
