Parmesan Potatoes

These simple potatoes are a perfect side dish or easy appetizer.

Ingredients

  • 1 1/2 pounds baby potatoes halved
  • 1/4 cup melted butter
  • 2 garlic cloves grated
  • 1/3 cup grated parmesan
  • 1 tsp smoked paprika
  • Salt
  • Pepper
  • 1/4 cup Parsley

Instructions

  • Preheat oven to 400 degrees.
  • Add melted butter in a 9 x 13-inch baking dish
  • Add parmesan cheese, garlic, salt, pepper, paprika and parsley into butter.
  • Spread thinly in the baking dish.
  • Score potatoes about 1/4-inch-deep in a diamond pattern (crosshatch).
  • Add potatoes cut-side of each potato in the pan.
  • Bake until the potatoes are tender and the Parmesan creates a golden crust on the bottom of the potatoes, about 20-25 minutes.
  • Let stand 5 minutes before using a spatula to release potatoes from pan.

Notes

If you want even crispier potatoes, soak them for 30 minutes to 24 hours ahead of baking.
Using freshly grated parmesan will result in the freshest flavor.
