For the Couscous Salad

  • 16 ounces couscous uncooked + 3 cups boiling water
  • 1 cup grape tomatoes halved
  • 1/2 cup red bell pepper chopped
  • 1/2 cup orange bell pepper chopped
  • 1/2 cup green bell pepper chopped
  • 2 scallions chopped
  • Kosher salt to taste
  • 2 cups rotisserie chicken cubed (feel free to omit or sub with chickpeas for a plant-based recipe)

For the Tahini Dressing

  • 1/3 cup extra virgin olive oil
  • juice of 1/2 lime
  • 1 Tablespoon white vinegar
  • 2 Tablespoons tahini
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste

Instructions

  • In a large, heat-safe bowl, add the couscous. Pour the boiling water on top, and add a pinch of salt. Cover the bowl tightly with aluminum foil, and set it aside for 10 minutes.
    Kosher salt to taste, 16 ounces couscous
  • Add all the ingredients for the dressing in a bowl or mason jar. Mix or shake until they are well combined and smooth.
    1/3 cup extra virgin olive oil, juice of 1/2 lime, 1 Tablespoon white vinegar, 2 Tablespoons tahini, 1 teaspoon oregano, 1/2 teaspoon paprika, 1 teaspoon salt or to taste, 1 teaspoon black pepper or to taste
  • In a large mixing bowl, add the chopped veggies and chicken. Drizzle the dressing on top, and toss to combine.
    1 cup grape tomatoes, 1/2 cup red bell pepper, 1/2 cup orange bell pepper, 1/2 cup green bell pepper, 2 scallions, 2 cups rotisserie chicken
  • Using a fork, fluff the couscous, and add it to the bowl with the rest of the ingredients. Toss again.
  • Garnish with fresh parsley, if desired. Enjoy!
  • Store in an airtight container in the fridge for up to 1 day.
