Quick Couscous Salad

For the Couscous Salad
- 16 ounces couscous uncooked + 3 cups boiling water
- 1 cup grape tomatoes halved
- 1/2 cup red bell pepper chopped
- 1/2 cup orange bell pepper chopped
- 1/2 cup green bell pepper chopped
- 2 scallions chopped
- Kosher salt to taste
- 2 cups rotisserie chicken cubed (feel free to omit or sub with chickpeas for a plant-based recipe)
For the Tahini Dressing
- 1/3 cup extra virgin olive oil
- juice of 1/2 lime
- 1 Tablespoon white vinegar
- 2 Tablespoons tahini
- 1 teaspoon oregano
- 1/2 teaspoon paprika
- 1 teaspoon salt or to taste
- 1 teaspoon black pepper or to taste
In a large, heat-safe bowl, add the couscous. Pour the boiling water on top, and add a pinch of salt. Cover the bowl tightly with aluminum foil, and set it aside for 10 minutes.
Kosher salt to taste, 16 ounces couscous
Add all the ingredients for the dressing in a bowl or mason jar. Mix or shake until they are well combined and smooth.

In a large mixing bowl, add the chopped veggies and chicken. Drizzle the dressing on top, and toss to combine.
1 cup grape tomatoes, 1/2 cup red bell pepper, 1/2 cup orange bell pepper, 1/2 cup green bell pepper, 2 scallions, 2 cups rotisserie chicken
Using a fork, fluff the couscous, and add it to the bowl with the rest of the ingredients. Toss again.
Garnish with fresh parsley, if desired. Enjoy!
Store in an airtight container in the fridge for up to 1 day.
