White Bean Dip with Roasted Tomatoes

Ingredients

  • 2 15.5-ounce cans cannellini beans, drained and rinsed
  • Juice of 1 large lime approx 3-4 tablespoons fresh-squeezed
  • 1 clove garlic
  • 2 tablespoons tahini paste
  • 2 teaspoons white vinegar
  • 1 teaspoon sea salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1/4 cup ice water plus more as needed

Spicy Oil

  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon crushed red pepper or less for less heat
  • 1/4 teaspoon sea salt

Marinated Tomatoes

  • 1 cup cherry tomatoes halved
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons Italian parsley chopped
  • 2 teaspoons white vinegar
  • 1/4 teaspoon sea salt
  • Black pepper to taste

Instructions

  • Make the marinated tomatoes: Add the cherry tomatoes, basil, parsley, olive oil, white vinegar, salt, and black pepper to a bowl. Toss until well combined and set aside to marinate while you prepare the dip.

  • Make the cannellini bean dip: Add the drained and rinsed cannellini beans, citrus juice,, garlic, tahini, salt, and black pepper to a food processor.

  • Blend until combined. With the food processor running, slowly pour in the ice water. Continue blending until completely smooth and creamy, adding another splash of ice water if needed.

  • Make the spicy oil: In a saucepan on medium-low heat. Add olive oil, heat for 30 seconds or until hot, remove from heat, and add smoked paprika, crushed red pepper, and sea salt. Set aside until ready to use.

  • Assemble: Spread the creamy cannellini bean dip onto a wide serving plate or shallow bowl.
  • Spoon the marinated tomatoes and their juices over the top.
  • Drizzle with the spicy oil and finish with extra fresh herbs, if desired.

Notes

Use 1 clove of garlic if you don't care for a strong garlic flavor.
