Koshary-Inspired Egyptian Pasta

  • ½ pound uncooked spaghetti
  • ½ pound uncooked ditalini
  • 1/4 cup avocado oil
  • 2 medium red or yellow onions diced
  • 6 ounces tomato paste
  • ½ cup tomato sauce
  • 4 cloves garlic minced
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon cumin
  • 1 Tablespoon vinegar
  • 1 cup water
  • Hot sauce for serving

Instructions

  • In a large pot, bring water to a boil and season with 1 tablespoon of salt. Add the spaghetti and ditalini, and cook to al dente. Note: If the cooking times vary drastically, you may need to start the spaghetti first. Check the package instructions before you begin!
    ½ pound uncooked spaghetti, ½ pound uncooked ditalini
  • Heat ¼ cup of avocado oil (or substitute with vegetable or any neutral oil) in a deep pan over medium heat. Fry the diced onions until golden brown. Remove the onions and drain on a paper towel, setting them aside.

  • Return the pan to the stovetop, removing excess oil if necessary. Add the tomato paste, tomato sauce, and minced garlic, frying for 1-2 minutes. Then add salt, pepper, cumin, vinegar, and water, allowing the mixture to simmer for 3-4 minutes.

  • Mix in half of the fried onions, then add the cooked pasta to the pan, stirring well to combine.
  • Garnish with the remaining fried onions before serving.
