Ingredients

Mascarpone Cream

  • cups mascarpone cheese
  • ¾ cup granulated sugar
  • tbsp vanilla paste
  • 2 cups cold heavy whipping cream

Chocolate Ganache

  • ¾ cup semi-sweet chocolate finely chopped
  • ½ cup heavy cream hot
  • Pinch of salt

Hot Chocolate Soak

  • ½ cup brewed espresso or strong coffee hot
  • ½ cup semi-sweet chocolate chunks or chips
  • ¼ cup whole milk hot

Assembly

  • 1 package ladyfingers
  • Unsweetened cocoa powder for dusting, optional

Instructions

  • In a large bowl, add the mascarpone, sugar, and vanilla. Beat just until smooth and creamy, being careful not to overmix.

  • With the mixer on low, slowly pour in the cold heavy whipping cream. Increase speed and beat until soft peaks form. Do not overwhip, or it can curdle and separate; you want it to be creamy. Set aside.

  • To make the ganache, place the chopped chocolate and salt in a bowl. Pour the hot heavy cream over the chocolate and let it sit for 5 minutes. Stir until smooth and glossy. Set aside to cool while you assemble the tiramisu.
    ¾ cup semi-sweet chocolate, ½ cup heavy cream, Pinch of salt
  • For the hot chocolate soak, combine the hot espresso, chocolate chunks, and hot milk in a bowl. Whisk until the chocolate is fully melted and smooth. Let it cool slightly so it’s warm but not too hot.

  • To assemble, quickly dip each ladyfinger into the warm chocolate soak (do not oversoak) and arrange in a 9×9-inch (23×23 cm) dish.

  • Spread half of the mascarpone cream over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone cream.
  • Pour the ganache evenly over the top layer and smooth gently.
  • Cover and refrigerate for at least 8 hours or overnight to set completely.
  • Optional: Dust with cocoa powder before serving.
