Marinated Feta Cubes

  • 1/2 cup extra virgin olive oil
  • 2 teaspoons honey
  • 3 cloves garlic finely diced
  • 1 Tablespoon chives finely diced
  • 2 teaspoons fresh oregano
  • 1 teaspoon chilli flakes
  • 2 blocks feta cut into small bite-sized cubes

Instructions

  • In a small mixing bowl, whisk together extra virgin olive oil, honey, garlic, chives, oregano, and chili flakes.

  • Pat the feta dry, and dice it into small bite-sized cubes.

  • Spread a couple of spoonfuls of the marinade in a large shallow dish. Add the feta cubes on top, then pour over the remaining marinade. Ensure all the cubes are evenly coated.
  • Marinate in the refrigerator for at least 2 hours (4 hours is ideal). Occasionally baste or gently toss the feta if possible.
  • Bring it close to room temperature before serving to loosen up the marinade.
