Ingredients

CRUST:

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 10 Tablespoons unsalted cold butter

FILLING:

  • 2/3 cup light brown sugar firmly packed
  • 1/4 cup all-purpose flour
  • 1 teaspoon sea salt
  • 1 1/2 cups light corn syrup
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 4 Tablespoons melted butter
  • 1 3/4 cups pecans coarsely chopped

Instructions

Prepare the Crust:

  • Preheat the oven to 350 degrees Fahrenheit, and grease a 13x9-inch baking pan with butter or cooking spray.
  • In a mixing bowl, combine 2 cups of all-purpose flour, 1/3 cup of granulated sugar, and 1/4 teaspoon of salt.

  • Add 10 tablespoons of cold, unsalted butter to a food processor along with the flour mixture, and pulse until it comes together into a dough.

  • Press this mixture into the bottom of the prepared baking pan, forming an even crust.
  • Bake the crust in the preheated oven for about 18-22 minutes or until it's lightly browned.

Create the Fillling:

  • While the crust is baking, in a separate bowl, mix together 2/3 cup of firmly packed brown sugar, 1/4 cup of all-purpose flour, and 1 teaspoon of sea salt.

  • Stir in 1 1/2 cups of light corn syrup until well combined.

  • In another bowl, lightly beat 4 eggs, and add them to the sugar and corn syrup mixture.

  • Also, add 2 teaspoons of vanilla extract and 4 tablespoons of melted butter to the mixture, stirring until everything is well combined.

  • Stir in 1 3/4 cups of coarsely chopped pecans.

Assemble the Pecan Pie Bars:

  • Once the crust is ready, remove it from the oven, and immediately pour the pecan mixture over the hot crust.
  • Return the pan to the oven, and bake for an additional 25-30 minutes or until the filling is set and slightly golden on top. Do not over bake or they will dry out. It should be set but have a very slight "jiggle"
  • Let the pecan pie bars cool completely in the pan on a wire rack.
  • Once cooled, cut into squares or bars. Refrigerate.
