Preheat oven to 350 degrees F.
In a large mixing bowl, combine your pancake mix, dark brown sugar, baking powder, and cinnamon. Then add in vanilla extract and milk. Mix it all together using a whisk or silicone spatula until it forms a batter.
Melt the butter, either in your microwave in 30 second increments or on your stove top. The butter melts quickly, so be sure to keep an eye on it if you’re melting it in a pan. Once melted, pour the butter into the bottom of a 11x6 baking dish.
scoop your batter into the buttered dish. You’ll want to flatten out the batter so that the cobbler cooks evenly. It is ok if some of the melted butter comes up the side and over the top of the batter.
Sprinkle on your pecans. Make sure to spread them out as evenly as possible.
Sprinkle on the brown sugar in an even layer. Then you will add on the toffee bits.
Pour over the hot water. Do not mix this together!
Bake for 30-35 minutes. Let cool for a few minutes, serve warm with a scoop of vanilla bean ice cream!
