Pumpkin Protein Pancakes
These are the easiest 5-ingredient blender pancakes! They are healthy and gluten-free!
- 1 tbsp canned pumpkin puree
- 1/2 cup egg whites
- 1/2 cup rolled oats
- 1/2 cup cottage cheese
- 1/4 tsp cinnamon
- 1/4 tsp vanilla extract
- butter or cooking spray
Place all the ingredients in a blender. Blend until smooth.
In a non-stick pan or griddle add a little bit of butter or cooking spray. Measure out 1/3 cup and cook the pancake on each side.
Serve with a drizzle of maple syrup, and pecans!
