Pumpkin Protein Pancakes

These are the easiest 5-ingredient blender pancakes! They are healthy and gluten-free!

  • 1 tbsp canned pumpkin puree
  • 1/2 cup egg whites
  • 1/2 cup rolled oats
  • 1/2 cup cottage cheese
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • butter or cooking spray
  • Place all the ingredients in a blender. Blend until smooth.
  • In a non-stick pan or griddle add a little bit of butter or cooking spray. Measure out 1/3 cup and cook the pancake on each side.
  • Serve with a drizzle of maple syrup, and pecans!
