For the cucumber and tomato salad

  • 1 cup sliced baby tomatoes
  • 6 baby cucumbers or (1 English cucumber) chopped
  • 1/4 lemon juiced
  • 2 Tablespoons olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried mint
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

For the whipped feta

  • 8 ounces block feta
  • 1/4 cup Greek yogurt or plain
  • lemon zest
  • 1/2 lemon squeeze

Instructions 

  • In a large bowl, add the sliced tomatoes and cucumbers. In a second smaller bowl, whisk together the lemon juice, olive oil, vinegar, mint, salt, and pepper. Pour the mixture over the vegetables, and toss to combine.
