In a large mixing bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy. Add the egg and molasses, and mix until well combined.

WHISK

In a separate bowl, whisk the flour, baking soda, and spices until evenly combined.

COMBINE

Working slowly, add the dry ingredients to the bowl of wet ingredients, mixing until a smooth dough forms.

CHILL

Cover the bowl of dough tightly with plastic wrap, and transfer it to the refrigerator to chill. Preheat the oven and line baking sheets with parchment paper.

PORTION

Use a small cookie scoop or spoon to portion the dough into equal-sized balls, and roll them in a cinnamon-sugar mixture.

PLACE

Place the cookie dough balls on the prepared baking sheets, leaving space in between each piece.
