Dice strawberries and peel and dice cucumbers and apples.
Slice mango in thirds, then cut each slice on a crosshatch. In a large mixing bowl squeeze in orange and lemon.
Drizzle in the honey and whisk until combined. Add diced fruits and cucumbers, mixing thoroughly.
Fill the lettuce cups with the fruit salad. Garnish with goat cheese and walnuts/pecans, and enjoy!
