In a baking dish, combine the tomatoes, olives, pepper, shallot, garlic, sun-dried tomatoes, olive oil, oregano, salt, and pepper.
Toss to distribute, and transfer the mixture to a preheated oven until the tomatoes soften. Gently burst the tomatoes with a knife or fork if they haven’t already split.
