MAIN INGREDIENTS

Yukon potatoes large carrots onion  red pepper  green pepper  tomatoes  jalapeños garlic cloves stew meat  olive oil salt and pepper crushed red pepper garlic powder onion powder cardamom oregano bay leaf FOR THE SAUCE: tomato paste tomato sauce water

Sear both sides of stew meat. Add the potatoes, carrots, onion, red pepper, green pepper, tomatoes, jalapenos, and sliced garlic cloves to a large baking dish with the meat.

Combine

Pour the tomato paste, tomato sauce, and water into a cup and stir until combined. Pour over dish. Add the olive oil then sprinkle all of the seasonings on top. Finish off with a bay leaf.

Make the Sauce

Secure parchment paper and foil over the top and bake for the recommended time.

Bake

After allowing the dish to rest briefly, serve on its own or garnished with chives, cilantro, and parsley.
