Crisp, flakey croissants are stuffed with an almond filling, topped with almonds, coated with a rich egg custard, and baked to golden perfection.
Combine the butter, sugar, almond meal, eggs, and vanilla or almond extract in a mixing bowl.
Slice each croissant in half vertically, and spread the prepared almond filling generously on both sides. Arrange the croissants cut side up in a greased baking dish. Sprinkle sliced almonds on top.
In a separate bowl, whisk together all the custard ingredients until smooth. Pour the mixture evenly over the croissants, coating them completely.
Cover the baking dish with aluminum foil, and transfer it to a preheated oven. Bake covered.
Then, remove the foil, and continue to bake just until the top is golden brown and the custard is set. Be careful not to burn!
Allow your French toast with almonds to cool slightly in the pan. Then, serve warm with your toppings of choice.
