Apple Cider Muffins Recipe

Before you begin, preheat your oven, and lightly grease a muffin tin or doughnut panswith cooking spray. Make sure to get all the edges!


Whisk the flour, baking powder, salt, cinnamon, and nutmeg together in a large bowl.

In the bowl of a stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar until light and fluffy. Then, add the eggs one at a time, mixing well after each addition. Finally, beat in the vanilla extract.


Working slowly with the mixer on the lowest setting, add the dry ingredients to the bowl of wet ingredients, and mix just until no streaks remain.


With the mixer still running, slowly add in the apple cider in a steady stream until the batter is uniform. Spoon the batter into the greased pan, filling each cavity roughly ⅔ of the way full.


Transfer the muffins to the preheated oven, and bake just until they’re fluffy and golden brown and a toothpick can be inserted into the center and comes out clean.


While the muffins are baking, combine the remaining sugar and cinnamon in a small bowl. Then, in a separate bowl, melt the remaining butter in the microwave.


Allow the muffins to cool slightly in the pan. Then, transfer them to a cooling rack, and brush the melted butter evenly over each piece before rolling them in the cinnamon sugar mixture.
