Tilapia with Spicy Mango Salsa

Ingredients

  • 1 lb tilapia or cod filets
  • 1 mango diced
  • 1 avocado diced
  • 1/2 cup cilantro diced
  • 1 jalapeño seeded and diced
  • 2 tablespoons red onion diced
  • 2 tsp honey
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 ground cumin
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  • Fish: In a small bowl combine the paprika, garlic powder, and cumin. Sprinkle over fish with a drizzle of olive oil. Sprinkle salt and pepper on each filet. Place on broil for 10-12 minutes. Make sure to watch so the fish does not burn.
  • Spicy Mango Salsa:
  • In a large bowl whisk the honey, lime juice, salt and pepper (to taste). Add the mango, cilantro, avocado, jalapeño, and onion. Stir until combined.
  • Top each filet of fish with the mango salsa. Add cilantro and extra squeeze of lime juice on each filet.
